I felt like we were always picking through things we thought were acceptable to eat. A lot of people got sick and we weren’t exactly sure what was causing it so we were extra careful! Nobody wants to be sick on vacation
This is a yummy homemade salsa.
- Lucia's Mexican Sals
- 10 whole tomatoes
- 5 garlic cloves
- 1 onion
- 1/2 cup sliced pickled jalapeno peppers
- 1 tablespoon lime juice
- 1 tablespoon chopped cilantro
- 1 tablespoon salt

Preheat oven to "broil" and move an oven rack to the highest position in the oven closest to the broiler (I have an electric oven).
1st Step - Place tomatoes on a sheet pan and broil in the oven until the skin on the tomatoes are charred and blackened. This should only take about 5-10 minutes. Flip them over and char the opposite side.
3st Step - Add the hot tomatoes and jalapeno peppers to the onion and garlic and process until no longer lumpy. (You may need to work in batches).
